Everybody is confused about diet for weight loss, diabetes, and easily assimilable (digestible) food. Some dieticians say wheat contains gluten, so don’t eat it. Eat millets instead. Emmer grain is an ancient grain and is also called Farro and, locally in India, Khapli wheat. It is a big basket of protein, minerals, vitamins, and especially fiber. It contains 29% to 40% of the daily fiber requirement in one meal. It is hulled wheat and has 28 chromosomes, hence called tetraploid.

Emmer wheat has a special ingredient called niacin, a digestion booster. It contains magnesium and celanin, a good antioxidant useful in building bones, immunity, muscle, and the nervous system. Due to its abundant fiber, it cures constipation, increases metabolism, and improves skin and nervous system health. It contains 12.5 g of protein, 71 g of carbohydrates, 2.7 g of fiber, 38 mg of calcium, 360 mg of phosphorus, and 4.7 mg of iron.

Is Emmer Wheat Suitable for All?

Yes. Even diabetic patients can eat this wheat, though it has low gluten. The vital thing is that it regulates blood sugar and the secretion of insulin, an important digestive fluid. Due to its fibrous nature, it boosts metabolism and prevents constipation. Good digestion helps prevent and eliminate many diseases, such as obesity, hypertension, diabetes, heart trouble, and even cancer. Emmer wheat has been used across Europe as porridge since ancient times, around 3400 BC. It can be used to make pasta, bread, pilafs, and flatbread. In India, it is especially used for sweet chapatis, Payasam, and banana muffins. It is easily digestible, so those who cannot eat bread made from white fine flour (Maida) can eat emmer bread.
